Fast food doesn’t have to mean burgers and fries. At the Provo Food Truck Roundup, you can enjoy everything from waffles and shakes to wood-fired pizza and Korean BBQ.

“I used to think that all food trucks were just convenience foods,” said Provo Food Truck Roundup founder Anders Taylor. “The trucks we have are all pretty gourmet and really good. It’s changed my perception of what a food truck can be.”

The roundup is held on Thursdays from 6 to 8:30 p.m. outside Provo’s historic Startup Building at 560 S. 100 West, just a half block from Provo Central Station. This week, UTA will be handing out FAREPAY cards loaded with $5 on a first-come, first-serve basis. There will also be a UTA bus on site for you to explore.

Anders started the food truck roundup last winter as a way to attract visitors to a new event space inside the Startup building. Before long, the event grew to include more than a dozen food trucks and hundreds of participants. During the summer, the roundup also features live music from local bands.

“Food trucks really became pretty trendy, and it’s been really fun to be able to grow with that trend,” Anders said.
